Low Sodium Hummus

Super quick, easy to make, and much better for you than the store-bought kind. Fewer calories, fat, and no added preservatives or colors. Pretty sure I’m going to need to sell this at B Present Studio! YUM!! And what makes it good for you?

Legumes, chickpeas in this case, are a great source of both complex carbohydrates and protein. Tahini, the second most important ingredient, is rich in minerals, fatty acids like Omega-3, and amino acids.  Garlic helps manage blood pressure and cholesterol levels, among other medicinal benefits.  And lemon is a super fruit with immune-boosting powers, weight loss aid, digestive aid, and liver cleanser. Lemons contain many substances–notably citric acid, calcium, magnesium, vitamin C, bioflavonoids, pectin, and limonene–that promote immunity and fight infection.
Use freshly cut veggies to scoop it up and-presto- you’ve got a wonderful snack/light meal on your lips!!
INGREDIENTS:
2 (15 oz.) cans low-to-no sodium chickpeas (garbanzos), one drained, one with the liquid
1/4 cup (35g) raw sesame seeds                                                                                  
1 tablespoon olive oil
1/4 cup (60 ml) lemon juice
1 garlic clove, peeled
1 teaspoon cumin
(use of salt-optional-though not if you’re going for the “lower sodium” version, I made mine without salt)
I used my VitaMix blender (can I tell you how much I. LOVE. MY. VITAMIX.!!!!)  I never have to worry about having chunks of ingredients that the blender missed.  Vitamix is the MASTER BLENDER with the same horsepower as a lawn mower!!
1. Place all ingredients, except salt, into your blender container in the order listed and secure lid.
2. Start with low speed.  (on Vitamix select Variable 1.)
3. Turn on blender and quickly increase speed.  (Vitamix users-increase speed to Variable 10, then to High.)
4. Blend for 1 minute.  (Vitamixers use tamper to press the ingredients into blades.)
5. Season to taste with salt, if desired.
I think it tastes best chilled, so if I’m feeling really impatient or hungry I pop it in the freezer for 5 mins so I can have my yummy snack chilled in a flash.  Celery, bell peppers, cucumber-YUMMY compliments to this healthy treat!!  Enjoy!
